DRYING INSTRUCTIONS

  1. Slice tomatoes ¼” to ½” (6mm to 12mm)
  • A thinner slice yields a crispier chip, but it also lends itself to sticking.
  • A broader slice yields a more intense flavor and a fruit leather-like texture.
  1. Dehydrate at 125F/52C for 8-12 hours in a dehydrator
  • Because tomatoes are botanically a fruit, you can increase the temperature to 135-140F for a speedier dry.
  1. Flip after 5 hours
  • After 5 hours, flip the tomato slices to prevent the chance of their sticking to your trays.
  1. Make a Dryness Check
  • Allow your samples to cool for five minutes before snapping them when they’re entirely dry.
  1. Condition
  2. Place in an airtight jar to keep fresh.
